Hevia’s smoked fish salad recipe

This smoked fish salad was created 54 years ago in Hevia, a restaurant on Serrano Street, characterized by its classic style with top quality products and traditional dishes with modern touches. This recipe that you will surely have prepared at some time, is a different and very original way to enjoy the fish because the salting enhances its flavor and the bread improves the combination.
Ingredients
Smoked fish, 400 g
Haddock, salmon, cod, and anchovies
Salted fish, 400 g
Pollock, salmon, cod, and anchovies

Mayonnaise, 200 g
Egg, 1 Mild olive oil, 150 ml Salt Lemon juice, a few drops
Step 1
Chop all the ingredients for the vinaigrette very finely and mix. We will have to chop in equal parts red bell pepper, green bell pepper and spring onion and dress with a few drops of vinegar and generous oil.
Step 2
Chop the lettuce into julienne strips as finely as possible and also chop the different smoked products.
Step 3
Make the mayonnaise by emulsifying the egg and olive oil with a blender. When ready, add the salt and lemon juice and stir well. This smoked salad has the peculiarity of being very mellow so the mayonnaise is crucial.
Step 4
Mix all the ingredients until you get a creamy salad and add salt.
Step 5
Place on toasted brioche or a slice of toasted bread and finish with chopped hard-boiled egg on top.
Tips and suggestions
You can use any type of toasted bread, but the sweet touch of the brioche with the salty touch of the smoked fish goes very well. Similarly, the combination of fish is as wide as your imagination but the important thing is that they are smoked or salted, we could also include a little grated mojama or any fish cured at home.
