Hermelin with fig chutney

This recipe has been put together by the Italian chefs from Savoia Castle and is designed for the truly gourmet palate. A tip for a New Year’s Eve treat with good wine.

Ingredients:

4 pcs Hermelines King of Cheeses Original Roasted Hazelnuts dark baguette Chardonnay barrique wine For fig chutney: 150 g of fresh figs or fig jam 20 g butter 25 ml balsamic vinegar 25 ml hot water 2 tbsp cane sugar (omit if using fig jam) 1/2 tsp ground mustard seed 1/2 teaspoon curry 2 pcs spring onions or smaller peel of ½ lemon pepper salt

Procedure:

  • In a saucepan, lightly sauté finely chopped onion with butter, add figs and cane sugar or fig jam
  • .After 5 minutes, add balsamic vinegar and hot water, add the other ingredients – curry powder, ground mustard seed, a pinch of salt, pepper, lemon zest and heat over low heat for another 30 minutes./li>
  • Place the hazelnuts in a preheated oven at 160 degrees and leave to bake for 5 minutes for extra crunch
  • Serve the hot chutney with King Cheese Hermelin Original, roasted hazelnuts, dark baguette and Chardonnay barrique wine.
