Herb Speckle

This recipe is a bit more laborious, but the result is worth it. Spätzels are made with flour, eggs, water and milk, salt and a pinch of nutmeg. In Germany they are served with sauces and meat juices, and are also very popular with spinach and almonds or baked with eggs, cheese and other ingredients.

Ingredients:

310 g of plain flour 35 g of chopped fresh herbs (parsley) ./td> 25 g salt 210 ml milk 3 pcs of egg pinch of grated nutmeg fat to fry the crackling water to cook

Procedure:

1. Mix smooth flour with herbs and salt
2. Stir in the eggs and finally the milk, work into a smooth dough and let it rest for 1 hour
3. Press the speckles directly into the boiling unsalted water through a large-mesh sieve or use a gnocchi attachment, when the speckles float to the surface (after about two minutes), pull them out and drop them into ice water to prevent them from sticking together
4. Just before serving, fry the speckles in lard, then serve immediately.
