Herb frittata with peas

1 tbsp butter 1 pk small finely chopped shallots 8 pk larger egg 1/3 cup Skyr natur to taste salt, pepper, 1/2 cup peas 1/4 cup coarsely chopped fresh parsley 1/4 cup coarsely chopped fresh mint 60 g coarsely grated feta cheese some herbs for garnish

preheat your oven to 200°C. In a cast-iron skillet or roasting pan over medium heat, melt the butter and sauté the shallots until soft, about 2-3 minutes. In a bowl, beat the egg well with the Skyr. Season with salt and pepper, add the chopped herbs and feta cheese. Pour the mixture into the hot pan or casserole dish and stir. Once the eggs start to cook – set, transfer everything to the hot oven. The frittata is done when the bottom is cooked but the top is slightly soft. Finally, garnish with herbs and grated feta.
