Hen in red oil

Preferably a pressure cooked hen in a pressure cooker, torn into pieces, bathed in red oil, seasoned with wine, full fat mustard and spices.

Procedure:
1. Cook the cooked hen preferably in a pressure cooker until tender, more likely to be slightly overcooked
2. Once cooled, remove the skin and bones, and tear the meat into smaller pieces
3. Add soy sauce, red oil, mustard and white wine to the chicken pieces
4. Season the dish with pepper and salt, or dilute slightly with stock.
Recommendation:
Prepare 1 to 2 days in advance to allow the dish to melt.
