Healthy chocolate porridge with tahini

I always prefer porridge for a late breakfast in the cold season. Oat, buckwheat, wheat or spelt semolina. This recipe is made with cooked buckwheat groats. It is gluten free and dairy free. Breakfast buckwheat is great for a quick breakfast, quick meal. A flaked buckwheat is a finely chopped hulled buckwheat grain. It is quicker to process. It only takes a short time to cook, after soaking briefly before you prepare the other ingredients it cooks in 5-10 minutes (depending on the quantity).
The porridge combines calcium and magnesium: bananas, cocoa, tahini paste. Nuts provide a supply of healthy fats, and Jerusalem artichoke syrup takes care of better absorption of sugar into the blood. The energy bomb is excellent for smaller children from one year old, for athletes or for anyone who is more active. If using for small eaters, use nut paste instead of nuts, butter the nuts so that the small pieces don’t cause choking.

TIP: always buy organic buckwheat if you are celiac or suspect gluten intolerance. Buckwheat does not need to be processed in a clean room, it may contain traces of gluten from other grains.

Grate the apple on a “carrot” grater and simmer it with the Jerusalem artichoke syrup. Add the buckwheat, cover with water and boil. You can add cinnamon if you like.

Remove from heat, stir in cocoa and tahini paste. Preferably homemade. Chopped nuts can be added on top of the porridge along with the banana, sesame seeds and coconut sugar. Or mix them into the porridge as a paste – if you mix them soaked beforehand. Enjoy!
