Healthy carrot-potato porridge

ingredients

2 tbsp olive oil 3 slices butter 1 pk onion 300 g potatoes 300 g carrots 500 ml homemade broth salt ground black pepper freshly ground nutmeg

Melt the butter in a saucepan with the olive oil and sauté the finely chopped onion until golden

Add diced potatoes and carrots.

Salt and pepper the whole mixture, stir and fry for a while.

Pour in the broth just enough to cover the vegetable mixture.

Bring to the boil and cook for 20 minutes, or until the Vegetable Recipes are tender.

Drain by straining the broth into a container.

Add the remaining butter slices and freshly grated nutmeg to the drained Vegetable Recipes.

Pop the potatoes with a potato masher, basting as needed with the strained broth.

Next, use a whisk blender and stir the mixture further.

Season with salt and pepper.

Serve as a side dish with meat or fish.
