Ground Beef in Eggplant

Baked eggplants filled with meat mixture and then baked in the oven.
Ingredients:
Procedure:
1. Peeled onions, cleaned peppers and tomatoes roughly chopped, peeled garlic cloves finely chopped and mix everything with minced meat
2. Then roast until the meat is soft, add salt, pepper and finely chopped parsley
3. Cut the aubergines from one side, scoop out the soft flesh, peel the skins lengthwise zebra-shaped and lightly fry in oil
4. Fill the cooled aubergines with the prepared meat mixture, spread them in a greased baking dish, pour water up to three quarters of the height of the aubergines and bake in the oven at 180 °C until the water has completely evaporated.
Recommendation:
Serve with boiled potatoes.
