Grilled Onions with Hollandaise Sauce

Oil-rubbed sliced onions, grilled, served with sauce.
Ingredients:
Procedure:
1. Melt the butter and keep it warm and runny, heat the vinegar or lemon juice slightly
2. In a small saucepan put water on to boil, set a bowl in it so that the bottom does not touch the water, put the egg yolks in and whisk until they begin to thicken, then add the first teaspoon of hot water, whisk and repeat until all 4 tablespoons are used
3. Now pour in the warm vinegar or lemon juice, take off the heat and whisk in the melted butter in a thin trickle, add salt and pepper and whisk to a thick, smooth, gently foamy sauce
4. Slice the onions lengthwise, brush with oil and fry on a frying pan or under the grill and serve with the prepared sauce.
