Grilled marinated salmon

Clean and wash the salmon fillet. If you want to keep the skin, remove the scales with a vegetable peeler, otherwise remove the skin and scales at the same time. Cut the salmon into smaller pieces, about 4-5 cm wide. Dry each thoroughly with a kitchen paper towel.

Marinade: Put the pepper, cumin, garlic, lemon juice and a few drops of olive oil in a bowl. Salmon is a higher fat fish, so additional fat is not desirable. Brush the individual pieces of salmon with the marinade, cover with the rest and refrigerate for 1 hour. The marinating time is not included in the total recipe preparation time.

In the meantime, prepare equal sized squares of foil. First, season the marinated salmon very lightly with salt. Then place two pieces in the centre of the square, leaving a gap of about 0,5 cm between them so that they do not join when grilling, place a small part of a sprig of rosemary on top for aroma and cover with the other square. Tightly join the sides all around and fold in. Wrap all remaining pairs of portions in this way.

Heat the oven and grill to about 200°C, or according to your oven’s instructions. Place the parcels on the grill rack under the grill (grill position 3) and grill on each side. One side for approx. 12-15 minutes and the other side for 8-10 minutes. Salmon prepared in this way in foil can be grilled on an outdoor grill in the summer season as well.

When the salmon is ready, take it out of the foil, serve it on plates, pour the broth over it and garnish with a sprig of fresh rosemary. You can also add a slice of lemon. Serve with fresh Vegetable Recipes and grilled wholemeal baguette. Enjoy!
