Green vegetable risotto and soup

ingredients

1 pk smaller leek 500 g frozen broccoli 200 g frozen spinach leaves 1.5 cups round grain rice 3 cups water 1 pk onion packets lard packets salt 80 g butter 80 g parmesan

procedure

1.

Fry the onion in the lard until glassy. Add the rice, fry for a minute and cover with boiling water. Add 1 tsp salt. Cook for about 15minutes, let it finish under cover.

Cook broccoli in salted water (1čl) for about 10 minutes.

Fry the leeks in the lard. Pour in water, simmer. Add a few balls of frozen spinach leaves.

Add 2/3 of the cooked broccoli. Stir.

5.

Mix with rice. Add butter and parmesan cheese.

Stir the rest of the broccoli into the soup. I also simmered some brussels sprouts, a piece of leek, some spinach and one potato in the water and the soup was ready 🙂
