Green spinach on Maundy Thursday

2 packets frozen spinach 1 pk egg to taste salt to taste vegeta 2 cloves garlic to taste ground black pepper 1 pk onion lard plain flour 1 cube vegetable broth

Green Thursday is an important Christian day. It is the day of the Last Supper of Jesus Christ with the apostles and the day of the institution of the Eucharist. Traditionally, green foods were eaten then. Usually on this last Thursday before Easter, spinach, sorrel or even a concoction of young nettle leaves were cooked, which could heal the blood. Although it is not a rule, on this day one should always eat something green to be healthy. And it doesn’t matter if it would be a soup of spring herbs, traditional spinach, lettuce, potatoes with cabbage, mashed beans or lentil soup.

Fry the finely chopped onion in a little lard. When it is golden brown, add the spinach. Pour in the vegetable stock, which you have previously mixed in a little water. Add salt, black pepper, a little vegeta and garlic. Let it come to the boil.

Then add the whole egg, which we mix in the spinach. Finally, thicken with a little plain flour.

Serve with potatoes and hard-boiled eggs.
