Green salad

Greensalad is not rocket science. Success depends, of course, on fresh ingredients and the quality of the olives. A good olive oil gives the salad that final, spicy, fruity flavour it needs.
Ingredients for four
1 bunch of frisee;4 handfuls of rocket 1 cucumber 1 bunch of basil 4 tablespoons of good quality olive oil 1 tablespoon of balsamic vinegar
Tip: Other types of lettuce can be added to the green salad, as well as grated summer squash at harvest time.
Muddle the arugula and frisée salad. Dry on a paper towel or in a salad bowl.
Shrink all ingredients and mix well. Peel the cucumber in winter. Wash in summer and slice into the salad.
Just before serving the green salad; pour olive oil and balsamic vinegar over the salad. Toss well and serve immediately.
