Green chicken enchilada recipe from access daily TV show

Ingredients: 1 lb. chicken, 1/2 onion, 1 clove garlic, 1/2 green pepper, 1/2 tsp. chili powder, 1 can diced green chilies, 1/4 cup cilantro, 10 oz. can enchilada sauce, 10-12 oz. Monterey Jack cheese, 10-12 6-inch corn tortillas
Instructions:
1. Preheat oven to 350 degrees Fahrenheit.
2. In a large skillet, sauté chicken, onion, garlic and green pepper in olive oil over medium heat until chicken is cooked through.
3. Add chili powder, green chilies, cilantro and enchilada sauce to the skillet and mix well.
4. Spray a 9×13 inch baking dish with cooking spray.
5. Dip each tortilla in the enchilada sauce mixture and fill with chicken mixture.
6. Roll up each tortilla and place seam side down in the baking dish.
7. Pour remaining enchilada sauce over the rolled up tortillas and spread evenly.
8. Sprinkle with shredded Monterey Jack cheese.
9. Bake for 25-30 minutes or until cheese is melted and bubbly.
This recipe is perfect for a quick and easy weeknight meal. Serve with a side of steamed rice and beans for a complete meal
