1. If you want the green beans to stay beautifully green, cook them for 4 min in boiling water or less and then drain and rinse in cold water. 2. Preheat a wok or other pan. Add the ginger oil. 3. Throw in the finely chopped garlic. 4. After 20 seconds (when the garlic starts to smell), add the green beans, followed by the shimeji mushrooms and water. 5. Sauté for 3-4 minutes. 6. Add soy sauce and brown sugar. Reduce. 7. Finally, add sesame seeds, butter to soften and lime juice for a sweet and sour taste. 8. Serve with sliced chillies.
