Greek soup avgolemono

Traditional Greek cold soup made of chicken broth, rice, eggs and lemon juice.

Ingredients:

4 cups of strained chicken broth 50 g rice 2 pcs eggplant 1 pk citron 3 tbsp lemon juice salt

Procedure:

1. Pour the stock over the parboiled, rinsed and steamed rice, add salt, bring to the boil and cook until tender on a very low flame
2. In a soup bowl, whisk the eggs and lemon juice until frothy, whisk in two cups of the boiling broth, then add the remaining broth with the rice and continue whisking until the soup thickens
3. Cool the soup to room temperature first, then place in the refrigerator and chill thoroughly
4. Before serving, stir the soup and garnish with peeled lemon slices.
