Greek Grandmas Cucumbers
Greek grandma’s cucumbers differ from Finnish cucumbers in that they come with feta. It’s a great and cooling salad for a barbecue, for example.
Ingredients for six
1 large fresh cucumber or 3 open cucumbers 200g feta cheese dill
1-2-3 broth0.5 dl white wine vinegar 1 dl sugar 1.5 dl water
Bring the 1-2-3 stock to the boil in a saucepan and add the stock. Peel and dice the cucumbers in a bowl. When the 1-2-3 broth has thickened, pour it into the bowl over the cucumbers. Stir in the chopped dill stalks and place the cucumbers in the fridge to marinate for 2-24 hours.
Sieve off the stock and return the cucumbers to the bowl. Dice the feta cheese and serve. Garnish the Greek Grandma’s cucumbers with dill.
