Greek Eggplant Salad

Cooked eggplants mixed together with garlic, lemon juice, olive oil and spices.

Ingredients:

4 pcs large eggplants 2 pcs garlic cloves 1/2 pcs of lemon 3 tbsp chopped parsley 2 tbsp oil ground pepper salt

Procedure:

1. Pour boiling water over the eggplants so that they are submerged and cook them until tender (about 15 minutes)
2. Peel the eggplants, cut them into smaller pieces and mix them well together with finely crushed garlic, salt and ground pepper – wipe them
