Gratinated Greek-style Vegetable Recipes with cheese

Cuket with onions and tomatoes topped with goat cheese, baked in the oven.

Ingredients:

500 g tomatoes 200 g goat’s cheese in brine 5 tbsp olive oil 3 tsp provençal spices 1 piece large zucchini 1 piece onion ground pepper salt

Procedure:

1. Wash, clean and cut the zucchini into wider strips, cut the peeled onion into rounds, cut the tomatoes crosswise, steam in boiling water, peel and cut into larger cubes
2. Fry the zucchini in 2 tablespoons of heated olive oil for about 15 minutes, season with salt and place in an ungreased baking dish
3. Sauté the onion and Provençal spices in 2 tablespoons of heated olive oil, add the diced tomatoes, cook briefly, season with salt and pepper to taste and add to the zucchini
