Grandma’s homemade ham fritters
Homemade and then cooked ham fritters, baked until golden brown with smoked meat, onions and beaten eggs.
Ingredients:
Procedure:
1. Mix the coarse flour, eggs, water, salt in a bowl and when the dough starts to come together, transfer it to a rolling pin and knead it by hand until it is smooth, divide it into 3 parts and wrap the rest in cling film to prevent it from drying out
2. Gradually roll out the dough on a floured roll into a very thin sheet, place it on a clean towel, let it dry, then cut into wider noodles and cook in salted boiling water until tender (about 10 minutes), drain, rinse with cold water and let it drain
3. Cut the cooked smoked meat into cubes, peeled onion into fine cubes and fry both in hot fat, when the onion starts to turn golden brown, remove from heat and transfer to a bowl
4. Add the cooked spots, salt, pepper, mix, transfer to a greased and breadcrumb-lined baking dish, place in a preheated oven at 170 °C and bake for about 20 minutes, when they start to turn golden, pour the beaten eggs in milk with a pinch of salt and finish baking
5. Remove the baked patties from the oven, let them rest for 10 minutes, then cut them into portions with a sharp knife, divide them on plates and top with pickles.
