Goose Liver with Baked Apples

The recipe from Hungary has the original name: Libamájszeletek roston, sült almával. It is roasted slices of goose liver served with apples, topped with the juice of Tokaj wine.

Ingredients:

800 g of goose liver 500 g apple 125 g butter 1 dcltokay wine 1/2 handful green parsley flour salt

Procedure:

1. Cleaned goose liver, carefully remove the bile, wash well in cold running water, dry and cut into equal slices (do not knock the liver, just shape it with the flat side of the knife)
2. Salt, coat both sides in flour and fry in melted butter until red
3. Remove the finished liver from the fat, place the cored, sliced apples on top and fry them as well
4. Remove the apples, pour the Tokaj wine into the fat, season with finely chopped green parsley and cook well
5. Place the slices of liver on the preheated plates, place the roasted apple slices on each and pour the juice of the Tokaj wine over everything.

Recommendation:

Serve fried potato straw, risotto or mashed potatoes as a side dish to the liver prepared in this way.
