Bone-in chicken thighs are a great way to get juicy, flavorful chicken without all the work. This recipe for Thai-Style Sweet and Sour Chicken Thighs is easy to make and can be made ahead of time. Serve it over steamed rice or noodles for a complete meal.
For the sweet and sour sauce, you’ll need:
1/2 cup sugar
1/4 cup white vinegar
1 tablespoon ketchup
1 tablespoon fish sauce
1 tablespoon soy sauce
1 teaspoon cornstarch
To make the sauce, simply whisk all of the ingredients together in a bowl.
For the chicken, you’ll need:
3 pounds bone-in chicken thighs
Kosher salt and freshly ground black pepper
1 teaspoon vegetable oil
1 medium onion, chopped
3 cloves garlic, minced
2 cups frozen chopped cabbage
1 cup frozen chopped carrots
Season the chicken generously with salt and pepper. In a large skillet over medium-high heat, heat the oil until shimmering. Add the chicken and cook until browned on both sides and cooked through, about 8 minutes per side. Remove the chicken to a plate.
To the same skillet, add the onion and garlic. Cook until the onion is soft, about 5 minutes. Add the cabbage and carrots and cook until tender, about 5 minutes. Stir in the sweet and sour sauce and bring to a simmer. Return the chicken to the skillet and cook until heated through, about 5 minutes.
Serve the chicken over steamed rice or noodles
