Goat cheese salad
Salad with goat cheese is a delicious and quite tasty dish for lunch, for example. The goat’s cheese needs to be cooked very quickly in a pan so that it doesn’t melt completely.
Ingredients for four
300g goat’s cheese on a putty surface 1 tablespoon of lettuce 2 handfuls of baby spinach 1 cucumber cherry tomatoes pine nuts 1 tbsp.croutons parsley olive oil and balsamic vinegar
Soak the pine nuts in a pan and take a little water. Be careful not to overcook. Move to the side.
Set aside the spinach and lettuce. Leave to dry. Peel and dice the cucumber. Slice the cherry tomatoes.
Cut the goat’s cheese into thin slices. Fry quickly in a hot pan until golden on both sides. Let the inside melt, otherwise the cheese will melt completely. The good goat’s cheese has enough fat not to get into the pan.
Serve the salad with lettuce, spinach, cucumber, tomato and croutons. Top with a slice of fried goat’s cheese.
Garnish the goat’s cheese salad with torn parsley. Season with olive oil and balsamic vinegar. Sprinkle with pine nuts and serve immediately.
