Gluten-free cheesecake with fruit

5 packets Golden cob 10 pcs eggs 10 tbsp granulated sugar 1 tsp baking soda

2 packets Golden cob from Dr. Oetker 500 ml milk 8 tbsp granulated sugar 1 crucible soft cottage cheese 2 packets vanilla sugar 125 g plain butter

This recipe came about a long time ago, but the reason was that my mom was diagnosed with celiac disease. A disease where she can’t eat gluten. The beginnings were difficult because there weren’t as many gluten free products as there are now. Not to mention flour. The dough didn’t hold together, it kept sticking, you couldn’t make anything out of it. I, as a daughter, was always very sorry when there were celebrations and my beloved mother couldn’t have anything. She had to deny herself everything. One day I told myself that it couldn’t be like that. Why should the very person I love so much be deprived of the pleasures that others could indulge in at any time? I began to experiment. Thanks to Dr. Oetker’s puddings, which didn’t contain anything that a celiac mom couldn’t, I came up with different recipes. There are many already, but I decided to add the one that was the very first and encouraged me to experiment further 🙂 The cake is really great, it’s not dry at all and you lick your fingers all over it. And most importantly, it’s completely gluten free 🙂 It’s suitable for a coffee after Sunday lunch, but also for celebrations 🙂

Corpus: Beat the egg whites until foamy. Beat the egg yolks with the sugar until foamy. Lightly whisk the egg mixture. Sift the golden cob with the baking soda into the mixture. Pour the batter into the cake tin lined with baking paper. Bake at 170 degrees for about 15-20min. Follow with a toothpick.

Filling. Remove and cover the top to form a skin.

Field: Cook the forest mixture with the sugar. Add the custard to the boiling mixture. Stir until it cools down a little, blend with an immersion blender, pour through a sieve because of the pits and pour over the cake. Decorate with fruit.
