Wild Rice Casserole
We’ve already shared two recipes with you for the new fierce wild rice casserole over the past month, and there’s another one coming today. Actually, there’s room for more, because the fish really does taste great – cook and fry it any way you like. But today’s recommendation is this: clear sole with wild rice and colourful cherry tomatoes.
Clear sole first arrived in Estonia last summer, and now you can get it at Mati’s Fish Shop in M.V.Wool. It’s a cross between a walleye and an anglerfish, which looks more like an anglerfish. The fish has a delicately juicy flavour, the fillet is pinkish-white, and is indeed suitable for grilling, frying and baking. With our experiments, we’ve now tried almost all the variations, and have been pleasantly surprised with each result.
Then we tried frying the fillet in a white wine, basil and tomato sauce, with a side of wild rice. The result was simply wonderful! As it doesn’t take much to prepare, it’s also perfect for a family dinner or lunch. However, any party would enjoy it too. The flavours that come together in this recipe are just so delicious.
