Glaze for poultry meat

This glaze adds a savory flavor and exotic aroma to roasted poultry.

Ingredients:

2 tablespoons soy sauce 1 tablespoondry sherry 1 tbsp liquid honey 2 tsp cane (brown) sugar 1/4 tsp of Chinese five-spice (star anise, fennel, cinnamon, cloves, pepper) 125 ml of water

Procedure:

1. Bring soy sauce to a boil over low heat, let bubble for 1 minute, then add water, honey, sherry, dark sugar, spices, stir and heat until sugar dissolves
2. Brush this glaze over the roasted poultry.
