Ginger Noodles

Cooked noodles served with a sauce of ginger, mushrooms and other ingredients.

Ingredients:

375 g of medium thick egg noodles 300 g of fresh shiitake mushrooms 2 tbsp olive oil 2 tablespoons oyster or fish sauce 2 tbsp soy sauce 8 spring onions piece of ginger (5 cm) water oil

Procedure:

1. Cook the noodles in boiling water until tender according to the instructions on the package, then transfer to a bowl and drizzle with olive oil to prevent them from sticking together
2. Put finely grated ginger in hot oil, add fresh shiitake mushrooms, add a little water and fry for one minute
3. Then add cooked noodles, stir, heat for about 2 minutes and finally stir in thinly sliced spring onions, oyster (fish) sauce, soy sauce, olive oil to taste and serve.

Note:

Shiitake – an edible mushroom native to East Asia. It is now successfully cultivated outside of East Asia. In Czech it is called edible chickweed. It is very popular for its use in cuisine, especially in Chinese and other Asian cuisines. It can be bought in supermarket chains or specialty Asian stores.
