Asian noodle dish with salmon
As summer arrives, Asian flavours have repeatedly found their way onto my menu. Last month, oriental cuisine was represented by raamen and souvlaki, and this year I decided to make something exotic, following the trend. What makes this exotic recipe particularly unique is the ginger drink – Ginger Duke.
The Ginger Duke, a non-alcoholic ginger drink, can be described as “a life saver with a subtle flavour and aristocratic roots.” Indeed, it is a subtle drink that brings together ginger, spices and sweet citrus fruits. It’s all there in a shot of Ginger Duke. Be warned that, like all ginger drinks, Ginger Duke has a strong and distinctive character. However, on the aftertaste, the sweeter flavours and the sweetness come through to create balance. After one of my pints, I had an idea – why not use this ginger drink in a spicy dish? After all, Asian cuisine is quite spicy, and that’s how this recipe came together.
I used an Asian-style stir-fry pan to cook the Ginger Duke, rice noodles and salmon. The rice noodles were obviously healthier than the egg noodles. The meaty choice this time was salmon. First I poured a whole bottle of Ginger Duke into a pan and brought it to the boil. As soon as the ginger drink was boiling in the pan, I added the rice noodles. Once the noodles were soft enough, it was time to add the salmon cubes. They don’t need to boil for very long, but it’s important to keep the heat low.
When serving, I seasoned the noodles with fresh chilli and coriander. I would advise caution though, as we all have different levels of sharpness tolerance. If you think the dish could be more savoury, add an Asian-style soy sauce. The soy also adds an oriental flavour to the romaine.
Ginger Duke gives a whole new twist to an otherwise fairly traditional noodle romaine. Cooked entirely in a ginger drink, the noodle dish is, of course, truly gingery, but not overly so. Besides, this recipe is the perfect option for dinner when you don’t have the time or energy to cook anything fancy.
