German sausage stew

German sausage stew or “eintopf” is a simple and delicious dish. You just put all the ingredients in a pot and enjoy the stew for more than half an hour. Serve with German Riesling, Silvaner or beer.

Ingredients for four

400g bratwurst 100g smoked pork chops white beans (soupless) 2 potatoes 2 carrots 1 tbsp tomato puree 1 tablespoon of tomato paste 1 tablespoon of tomato paste 1 tablespoon of tomato paste 1 tablespoon of tomato paste 1 tablespoon of tomato paste 1 tablespoon of tomato paste 1 tablespoon4 dl white wine (or vinegar and water in 1/4 ratio) 2 dl water 1 leek 1 tsp black pepper

Peel the vegetables and chop finely. Only the white part of the leek. Cut the bratwurst into small pieces and the chorizo into very small dice.

Open the kettle, place the chorizo cubes on the bottom and start to slowly cook. Fry the cubes for a couple of minutes so that the fat comes off properly.

Then add the beans with their softened fat to the pan. Add the potato, carrot, tomato puree, white wine and water. Season to taste with pepper (the papou lime will be salty).

Cook for 10 minutes on a high heat. Add bratwurst and leeks. Cook for another 5 minutes. Check that the vegetables are cooked.

Remove the German sausage stew to the oven, and leave to cook under the lid for another 15 minutes.
