Garlic soup with croutons

ingredients

100 g garlic 60 g g grated Parmesan cheese 4 slices of aged bread 2 tbsp olive oil 1 litre chicken broth 3 pcs potatoes pepper salt

procedure

1. Chop the garlic finely and add it to the hot broth together with the diced potatoes. Bring the stock to the boil, then reduce the heat and simmer for 20 minutes. 2. Using an immersion blender, blend the soup well, season with salt and pepper. Toast the bread slices, rub with garlic and drizzle with olive oil. Place the croutons on a plate, pour the hot soup over them and sprinkle with Parmesan cheese.
