Fried tvarůžky with roasted potato chips and tartar sauce

At the end we prepared a real treat. Traditional Olomouc tvarůžky or tvargle, which comes from Velké Bystřice. Here they ripen under the vaults in the stone cellars. They are produced in an artisanal manner and with a large proportion of handwork. The reward for this is an exceptional taste and fine consistency. Prepare them fried in a triple layer, accompanied by homemade tartar sauce and potatoes.

Ingredients:

Number of servings: 4 servings 20 pcs of Tavoretus and. s. 2 pcs eggs 200 g of breadcrumbs 100 g of plain flour 200 ml of oil salt For the potato chips: 800 g mini potato chips 100 g butter 20 g chives pepper salt Tatar sauce: 200 g of mayonnaise 70 g pickles 70 g onions 25 g mustard pepper sugar salt

Procedure:

  • Coat the breadcrumbs in the classic triple coating, then coat once more in lightly salted eggs and breadcrumbs. Fry in hot oil.
  • Wash the chips and boil them whole until soft. Then fry them until golden brown in butter, sprinkle with salt and chives.
  • Slice the onion and cucumber finely and add to the mayonnaise. Season with mustard, salt, pepper and sugar.
  • Divide the patties onto plates and serve with the chips and onions, mustard, pickles and spiced tartar sauce.
