French Pretzels

Recipe from Alsace for savoury pretzels suitable not only as a side dish, but also as a snack with wine or beer.

Ingredients:

Size for approximately 8 pieces: 500 g of plain flour 200 mlmoist water 1 packet (7 g) dried yeast 1 teaspoon of sugar 1 teaspoon of salt

rolling flour To finish: 1 tsp soy sauce 1 piece of yolk greaseproof baking sheet coarse salt, sesame seeds or poppy seeds for sprinkling

Procedure:

1. Mix the flour with the yeast, add the sugar, water and salt, work everything into a smooth, smooth dough and leave in a warm place to rise for about 45 minutes
2. Transfer the risen dough to a lightly floured rolling pin and knead again, divide into 8 equal parts and shape each into a roll about 45 cm long, each roll should always be thicker in the middle than at the ends
3. Whisk the egg yolk with the soy sauce and brush it over the pretzels
5. Bake in a preheated oven at 200 °C for about 20 minutes, then leave in the oven off for a few minutes to dry out.

Recommendation:

Before baking, you can. but you do not have to sprinkle the pretzels with coarse salt, sesame seeds or poppy seeds.
