French Potatoes V.

Our Czech baked potatoes, which we call French potatoes, were already known to our grandmothers and great-grandmothers. Nevertheless, they are still one of the dishes that many Czech families like to return to. And what variations there are! Here is one according to our friend Nadi Indruchová.

Ingredients:

8 pcs medium sized potatoes 4 pcs hard boiled eggs 2 pcs small onions 250 g smoked bacon

1/2 cups of cooking cream 12% 2 tbsp of lard freshly cracked pepper salt

Procedure:

1. Peel the potatoes and boil them in salted water until semi-soft, i.e. cook for about 13 minutes, then let them cool
2. Cut the onion and smoked flank into cubes
3. Grease a baking dish or baking pan with 1 tablespoon of lard, slice the cold potatoes and boiled eggs (I slice both in an egg slicer)
4. Put a layer of potatoes in the baking dish, add salt and pepper, add onion, smoked flank, sliced eggs, salt and pepper again, top layer is again sliced potatoes
5. Pour the cream over all, add salt and pepper and top with flakes of lard
6. Bake in the oven at 200 °C for about 40 minutes.
