French lemon pancakes

180 g butter 260 g spelt flour 100 g sugar 1/2 KL salt 600 ml rice milk 1/2 KL vanilla extract 6 pcs egg

100 g sugar 50 ml water 45 ml lemon juice 15 ml lemon liqueur 30 g butter

1. Put 200 ml of water in a saucepan and let the butter melt. 2. In a bowl, whisk the eggs with the sugar, milk, salt, vanilla extract. 3. Add the melted butter and finally add the flour. 4. Make pancakes with the prepared batter. 5. Now comes the topping: dissolve the sugar in the water and cook over a gentle heat, stirring constantly, until the sugar starts to caramelise (brown). 6. Then add the lemon liqueur, 45 ml lemon juice and butter. Wait for it to dissolve and set aside. 7. Serve the pancakes with this topping only. They are delicious!
