Fragrant apple-cinnamon chia raw pudding

3/4 cup coconut milk 1/3 cup walnuts 2 tbsp chia seeds 1 tsp rice syrup 1 tsp ground cinnamon 3 pcs dried dates 2 pcs apple

1. In a bowl, mix coconut milk with chia seeds and set aside for at least 15 minutes to rest. 2. Meanwhile, in a blender, blend the diced apple (in cubes), nuts, dates, syrup and cinnamon. Do not blend completely until smooth, leave small chunks. Add the mixture to the chia seeds. 3. Then just layer in a bowl, jar or if you want to take the raw pudding with you to work or school, spoon it into a resealable jar. 4. Alternate between a layer of pudding and a layer of sliced apple. You may, but don’t have to, put it in the refrigerator to chill.
