500 g plain flour (type 00 1/2 cube yeast fresh 400 ml lukewarm water 1/2 tsp sea salt olive oil cherry tomatoes, red onion, olives, spring onion, garlic… fresh herbs (parsley, basil, rosemary…) sunflower seeds

Italian sourdough bread pancake.

Place the yeast in lukewarm water and mash with a fork.

Add a little flour, stir to prevent lumps from forming. Progressively add the remaining flour until a dough forms.

In a bowl, work the dough and set aside in a warm place. Cover with a tea towel and leave to rise for about 2 hours.

Transfer the risen dough to a floured board and shape into a loaf. Using your hands, stretch the dough and transfer it to a baking tray lined with baking paper and adjust it to the shape of the tray.

Brush the surface of the dough generously with olive oil and only now season with salt. Spread the salt and oil evenly with your hands. Use your fingertips to make a thick indentation and bake.

Bake the focaccia at 250 °C for about 10-15 minutes. Allow to cool for about 10 minutes and then slice. Serve for breakfast, with soup or wine. Enjoy!
