Fluffy pancakes with fruit
ingredients
200 g semi-coarse flour 50 g granulated sugar 1 packet vanilla sugar 1 packet baking powder 1 pinch salt 250 ml milk 2 pcs egg 2 tbsp vegetable oil

currant jam, nutella, cottage cheese

Excellent pancakes, not only suitable for breakfast.

Pesto: sift the flour and baking powder into a bowl, add half the sugar, vanilla sugar and mix. Add milk, oil, egg yolks and beat with a mixer on the lowest setting.

Beat the egg whites with a pinch of salt until foamy and whisk in the remaining sugar. Stir gently into the batter and let stand for about 10 minutes.

Bake the flapjacks in a greased pan over a medium heat to prevent burning. When bubbles start to form, turn the pancakes over. You only need to grease the pan once at the beginning. There were 30 pieces in total.

Join the pancakes with jam, nutella, cottage cheese according to taste. I used my homemade currant jam. Sprinkle the surface with icing sugar and decorate according to your imagination, e.g. with fruit. They are delicious! Enjoy!
