Flemish hen soup

500 g beef 1 pk casserole 1 pk carrot 1 pk leek 2 pk onion 2 tbsp lemon juice 2 pk egg yolk 1 dl sweet cream a little celery to taste salt a little ground white pepper

1. Clean and gut the hen and divide into portions and cook with the giblets and beef. Collect the foam that forms during cooking frequently. Clean the onions and cut them into quarters, chop the celery, clean the carrots and leeks and cut them into rounds. 2. Add the prepared Vegetable Recipes to the meat, season with salt and cook for about 2 hours. Take out the tender meat, set aside the beef and use it to prepare another dish, bone the hen’s meat, remove the skin and cut it into small pieces together with the giblets. 3. Strain the stock, boil for a while, add the egg yolks mixed in the cream, season with pepper and add the pieces of hen’s meat and giblets. Sour the soup to taste with lemon juice.
