Fit carrot-walnut cake

ingredients

3 pk egg 100 g honey 1 dl coconut oil 1 pk lemon 150 g spelt plain flour 1 packet baking powder 150 g baking powder 150 g nuts 150 g carrots

A delicious, moist cake without sugar…

1.

Whisk the egg yolks with honey. Beat egg whites in a separate bowl.

Pour the melted coconut oil into the beaten egg yolks, followed by the lemon juice from one lemon and the grated carrot.

Mix 100g of the ground nuts with the flour and baking powder and mix into the batter along with 50g of the crushed nuts by hand.

4.

Finally add the egg whites.

5.

Transfer the dough into a silicone baking tin and bake at 180 degrees for 30 minutes.
