Fish soup with dumplings is a particularly quick and easy way to prepare something nutritious and tasty for the whole family on a weekday evening – soup is ready in about 10 minutes (it doesn’t take much time for the more experienced)!

A good soup requires a longer simmer to allow the flavours to deepen and harmonise. But after a tiring day at work, there’s no time for that! It’s much easier to grab the ready-made soup from the shop. Luckily, there are producers in Estonia who make delicious soups – Mamma, for example.

We’ve written about the benefits of fish soups before, and shared tips on how to quickly turn homemade soup into a tasty sauce for potatoes or mashed potatoes. Recently, we thought of a way to spice up a shop-bought soup with some home-made clippings!

Occasionally, clippings are made from chicken, but we decided to put the clippings in Mamma’s fish soup, which already has trout fillet, potatoes, carrots and everything else you need. We used a totally classic dumpling recipe. To make the dumplings extra tasty, we also added some nice fish flavoured soup stock!

Ingredients

  • 4 packets of Mamma’s Trout Soup

  • 2 tablespoons soup stock
  • 4 tablespoons flour
  • Salt
  • Pipart
  • One half of a cracked egg
  • Seasoning and herbs (we used a parsley seasoning blend)
  • Preparation instructions

  • We put the soup in a large pot and heat on the stove.
  • To make the dumpling dough, mix together the flour, egg, spices and 2 tablespoons of soup stock (adding the soup stock makes the dumplings taste extra good!)
  • Take teaspoon-sized portions of the dough and, using another teaspoon, push the dough on top into the hot soup. Once all the dough is incorporated into the soup in clumps, let it simmer for a few minutes.
