Fish Seljanka
Original fish soup was a favourite dish of Mannerheim’s. According to a Polish proverb, a fish has to swim three times before it tastes right. In water, wine and butter. 4 dl white wine (or water+vinegar 4/1) 1 tbsp honey 1 pickle dill black pepper sour cream
Make fish soup:
Chop the onion and garlic. Peel and chop the celery and potato. Peel and chop the celery, peel and peel the chillies. Sauté everything in olive oil and butter in a large saucepan. Season with honey.
Stir in the tomato. Freeze for a moment. Season with salt and pepper.
Mix the fish stock and wine in a saucepan. Wait for the fish stock to boil. Then drop in the chopped pickle and simmer for 20 minutes so that the vegetables are cooked.
Add the fish backbone and chopped dill and simmer for a few minutes so that the fish is just cooked. Garnish with sour cream and dill.
