Fish in aspic

Cold appetizer from Austria.
Ingredients:

1. Cook the cleaned fish until tender in salted and slightly acidified water, then bone it
2. Cool the freshly prepared aspic (according to the instructions on the package) to the thickness of honey, pour into a round mould and place in the refrigerator for a few minutes
3. When a thin layer of aspic has set on the sides, quickly pour the liquid aspic back into the container
4. Arrange the tomato slices and cooked beans in the mould, drizzle them with a little aspic and leave them in the fridge to set again
5. Cut the cooled fish, hard-boiled eggs and scallions into cubes, add mayonnaise, lemon juice, mustard, ground pepper and liquid aspic
6. Before serving, dip the mould in hot water for a second, quickly tip the aspic onto a round dish, place the seasoned lettuce in the centre and garnish with cucumber fans.
