Pancakes are suitable for absolutely every day. No explanation needed. This recipe is, like us, extremely simple and can be adapted to your own liking – it combines the savouriness of a delicate fish roe, the bright and versatile base flavour of a curd pancake, and a sour cream and shallot and onion sauce that brings the ingredients together beautifully and adds a bright spice.

We used M.V. M.V. pancake to make this recipe.Wool trout roe, whose texture and rich flavour contrast well with the other ingredients, and Mamma’s curd pancakes, which, as well as having a delicate flavour, also lend themselves to sweet dishes (the curd is actually baked into the dough).

  • Red Onion

  • Combine the chopped chives, sour cream and finely chopped red onion (quantities entirely according to taste!) and spoon onto the pancakes.
