Fish Casserole with Rice

1. Take the rice, rinse it with cold and then boiling water, pour 4 decilitres of water, add salt, add a piece of butter and simmer under the lid until tender
2. Bone the fish, cut into fries, arrange in layers alternating with rice in a buttered casserole
3. Sprinkle each layer with finely chopped parsley
4. Make a light roux from butter and plain flour, dilute with milk (cream), add tomato paste, ground pepper, salt, a pinch of sugar and boil
5. Pour the sauce on the prepared food, sprinkle everything with breadcrumbs, drizzle with melted butter and bake in a medium heated oven (180 °C) for about half an hour.
