Fine kluski

Traditional old Czech side dish made of mashed potatoes thickened with starch, the mash formed into rolls, from them individual kluski, those preserved in salted water.

Ingredients:

1 kg of potatoes 200 gpotato (starch) flour 1 tbsp butter 1 teaspoon salt 1 piece egg mildly salted water to boil potatoes and noodles

Procedure:

  • Before boiling, peel the potatoes, boil them in lightly salted water until tender, mash or mash the drained but still hot potatoes to a paste
  • Incorporate the butter into the slightly cooled mixture
  • Transfer the mashed potatoes to a larger bowl, separate 1/4 of the mashed potatoes and pull out, sprinkle with potato flour instead, add salt, egg yolk, return the removed portion of the mash and process until smooth
  • Shape the potato mixture into rolls, cut off the rounds, make balls from the rounds, flatten them slightly and press them slightly in the middle, for example with the end of a rolling pin
  • Bring the water to the boil to cook the kluski, add a little salt, dissolve a teaspoon of starch flour in about 1 dcl of cold water and slowly pour it into the boiling water while stirring
  • When the water is bubbling slightly, cook the individual kluski, stir them lightly with a spoon so that they do not stick to the bottom, when they float out, they are ready.
  • Recommendation:

    Kluski are excellent as a side dish to various meats and sauces, but can also be served as a main course. Kluski can be accompanied by fried onions, topped with crackling. In the past, kluski were also prepared sweet. They are great with cottage cheese and soft fruits such as raspberries, strawberries, blueberries … they can also be sprinkled with cocoa and spread with melted butter, etc.
