Fiber cake with blooms

Italian speciality, a baked cake flavoured with blum.

Ingredients:

400 g of blum 125 g of sugar 125 g of flour 60 g

td>Hera 5 pcs eggplant 1 pk bag of baking powder 1 teaspoon grated lemon zest fat to grease the tin coarse flour to line the tin

Procedure:

1. Line the bottom of the mould with baking paper, grease the sides and dust with flour
2. In a bowl, whisk a third of the sugar with the egg yolks and finely grated lemon zest, stir in the softened Hera, the semi-coarse flour with baking powder and finally the stiff egg white whipped lightly with the remaining sugar
4. Spread the batter into the cake tin, place in the oven and bake for 15 minutes at 180 °C, then spread the remaining cake cut into quarters and bake the cake for about 30-35 minutes until golden brown.
