Festive spinach fritters

Cool spinach fritters are topped with delicious goat’s cheese, bacon and sweet onions. A great starter and really easy to make from ready-made spinach fritters.

Ingredients for 4

350g pkt Crown of Delight spinach pancakes (organic) 200g chopped ham 2 onions 1/2 tsp sugar 2 tbsp cooking oil 2 tbsp pine nuts roasted parsley or chives for garnish The recipe is a commercial collaboration with Kruunu Herkku Oy:The recipe is produced in cooperation with the company “Kruunu Herku”.

Slice the onion and ham very thinly. Chop the goat’s cheese. You can discard the skins of the putty.
Toast the pine nuts in a pan for a while so that they get a little watery. Be careful not to burn them. Move to the side to wait for the decorating stage.

Soak the food and the onions in the pan. Sauté over medium heat until the onions start to soften. Do not over-fry the onions. When the onions are starting to become translucent and golden, season with sugar and set aside to wait.

Make the goat’s cheese béchamel: Melt the butter in a small saucepan and whisk in the wheat flour. In a small bowl, add the flour and flour in a small bowl and stir until smooth. Bring to a rapid boil and set aside. Melt the goat’s cheese into the béchamel and set aside. The aim is to get a fairly thick béchamel sauce.
