Poached salmon is great served at various celebrations. You can also prepare it at home, for example on New Year’s Eve, you will definitely surprise your loved ones or friends with this dish. The poached salmon is suitable for whole Atlantic salmon, chum salmon or gorbush, for example, weighing from 2-3 kg.
Ingredients:
1 pk
whole salmon, gutted, weighing 2-3 kg
Per batch:
1 l
of water
2 dl
natural white wine
1 dl
vinegar

400 g
of chopped root Vegetable Recipes (carrots, celery, parsley)
From the above ingredients, cook the batch in a large baking dish, the temperature should not exceed 100°C, 75 -85°C is ideal, heat for only a few minutes, 5-10 minutes is enough.
Place the salmon in the batch, cover, poach at 75-80 °C for 8-10 minutes, depending on the size of the salmon, carefully turn the fish once halfway through poaching.
Remove the salmon from the batch and leave on a tray to cool and drain.
Remove the skin from the cooled fish and decorate the sides with lettuce leaves, lemon slices, limes, oranges. Garnish the salmon with mayonnaise, capers and cherry tomatoes.
Let the salmon cool.
Recommendation:
When serving, slice the salmon into slices and serve with, for example, a sliced baguette or a wiener.
