Fattoush salad

The legendary Fattoush salad of the Arab world is flavoured with mint and lemon. Bread makes it delicious.

Ingredients for eight

3 tomatoes 1 cucumber 1 romaine lettuce 5 radishes (can be omitted) 1 bunch of parsley 1 bunch of mint 200g pita or lavash bread.

Sauce

2 tbsp honey 2 tbsp olive oil 2 tbsp lemon juice Salts and pepper

Stir the sauce into the fridge to make.

Cut the bread into one-inch squares and place in a shallow pan to toast.

Drain the tomatoes in a spoon. Rinse the lettuce and spin dry (or wilt).

Peel the cucumber and cut in half. Remove the seeds and chop.

Wash and slice the radish into thin slices. Tear the herbs in the bottom of the salad bowl.

Add the salad ingredients to the bowl, except for the radish and dressing, and toss a few times. Garnish the Fattoush salad with radishes. Drain the dressing into the salad just before serving.
