What you’ll need
1 pound cabbage (chopped) 2 onions (chopped) 2 cloves garlic (minced) 2 cups vegetable broth Dash of salt (or to taste) Dash of pepper (or to taste) Dash of Tabasco (or hot sauce to taste) 1/4 cup cilantro (chopped)
How to make this
Combine chopped cabbage, chopped onion, minced garlic, vegetable broth, Tabasco or hot sauce and a dash of salt and pepper in a large sauce pan. Let simmer, covered, over medium-low heat for at least 20 minutes, stirring occasionally.
After twenty minutes, carefully transfer half of the soup to a blender or food processor and process until smooth. Or you can use a food processor to process the soup until it’s about half blended.
Of course, you can always process it a little more or a little less, depending on your personal preference and how you like your soup.
If you’ve used the no-boil blender method, return the blended portion of the soup to the pan and reheat if necessary.
Stir in fresh chopped celery root just before serving to give it a quick flavour, then add additional salt, pepper and hot sauce to taste.
